Veggie of the Week: Sweet Potatoes

sweet potatoesDid You Know?  Sweet potatoes and yams are different vegetables. Sweet potatoes are native to South America but yams are native to Africa.

Flavor: Sweet potatoes have a moist and less starchy flesh than yams.

How to Enjoy:

  • When baking, don’t peel the skin – it’s rich in fiber.
  • Sweet potatoes are great for homemade pies.
  • Add to a casserole, soup, or stew to enhance flavors. 

Preparation Tips:

  • Scrub your sweet potatoes well before cooking them.
  • Keep peeled and sliced sweet potatoes in a bowl of water to prevent them from drying out if you are not using them right away.

Storage: Store loose in a cool, dark place. They will keep up to three weeks.


Nutrition: High in beta carotene (which the body converts to vitamin A).

RECIPE OF THE WEEK: Sweet Potato Pie       

        2 cups sweet potatoes, cooked (peeled)pie

 

        1 cup sugar

 

        1 cup milk

 

        3 eggs

 

        1 (8 ounce) packages
           reduced-fat cream cheese, softened

 

        1 teaspoon vanilla

 

        1 teaspoon cinnamon

 

        1 teaspoon nutmeg

 


Combine all ingredients in blender; blend well.

 

Pour into greased (I use olive oil cooking spray) pie pan.

 

Bake at 350°F for 25 to 30 minutes.
